As far as I can make out you need to create rows of 3 or more animals to remove them from the board - the more you remove in one go - or manage to remove by cascade - the more points you get. At the start of ech level it tells you the number of each kind of animal you have to remove. Move the items on the board by clicking on adjacent items you want to swap - and watch out for the flashing bonus sqaures.
